Punjabi Samosa

Pyramid shaped homemade snack ......an all time favourite..... does that ring any bell ?? Explore the recipe of punjabi samosa,the crispy flour shell with traditional potato filling.

Ingredients

Potatoes - 4 large 

1/2 onion - diced

Green chilli - 1 large

Garlic cloves - 2 diced

Turmeric powder

Cumin powder- 1/4 tsp

Garam masala- 1/4 tsp

Fennel- 1/4 tsp

Asafoetida- 1/4 tsp

Red chilli powder ( spicy) - 1/4 tsp

Aamchur (dry mango) - 1/4

Vegetable oil 

Salt 

Coriander leaves 

Green peas (optional)

Samosa pastry:

Puff pastry- 2 sheets

Vegetable oil (to grease while baking)

Egg wash - 2 eggs

Directions

1. Cut the potatoes small and boil in 1/4 tsp turmeric and salt. In a pan, saute diced onion, green chilli and garlic in oil. When it turns golden brown, add the cooked potato. Merge it and slightly smash it with spatula. 

2. Add the seasonings after merging - asafoetida, cumin, fennel, red chilli powder, garam masala, aamchur. Adjust the salt accordingly. Finally add green peas and coriander leaves. Take the puff pastry sheets. 

3. Stretch and cut it into semi circle shapes. Make conical shapes (as shown in video). Set the samosas on baking tray and cover it with egg wash. 

4. Bake at 180 degrees for 15 minutes. (Adjust the time more if you have more number of samosas).Serve the punjabi samosa hot with tamarind chutney or simply have a bite with coffee or chai.
