Christmas begins in just another 2 days and our moms , family friends would have started the heavy Christmas feast previews in their kitchen. Some items can have prep work early which makes our lives easier. Here I am posting the recipe of one such item. Its quite an indispensable snack during the time of Ramadan, Christmas and other family festivities. Beef Cutlet .... a combination of beef (cooked and minced) mixed with mashed potatoes, other ingredients and finally rolled out into desired shaped cutlets and deep fried in oil. Ingredients
Ginger garlic paste – 2 tsp
Turmeric powder – 1 tsp
Green Chilli diced - 1/2
Pepper powder – 1 tsp
Salt to taste
Beef - 500 Gms, cut into small cubes
Fennel - 1/2 tsp
Garam masala - 1/4 tsp
Water - as needed
Curry leaves
Onions diced - 2 and 1/2
Green chilli diced 1/2
Bread Crumbs
Egg whites - 2 (whisk the egg whites)
Potato smashed - 3 large
Coconut oil
Seasonings for preparation
Pepper - 1/2 tsp
Fennel - 1/4 tsp
Kaayam - a pinch
Coriander powder - 1/2 tsp
Garam Masala - 1/4 tsp
Asafoetida/Kaayam - a pinch
Method
1. Clean and chop the beef cubes. Season it with pepper, turmeric powder, green chilli, fennel, salt, garam masala and ginger garlic paste. Add sufficient water. (The water is added reasonably, so that it shouldn't get burnt at the bottom, although we need the beef to be cooked right and with all the water evaporated.)
2. Mince the beef (do not make it a paste form.)
3. In a mortar, grind curry leaves, pepper, fennel and kaayam. Saute onions diced and green chilli diced in coconut oil. Add the seasonings ground in mortar and coriander powder, garam masala and kaayam.
4. Once the mix becomes translucent, add minced beef and potato smashed.
5. Mildly roast curry leaves in coconut oil. One the leaves dry out, mildly crush it with hands and mix in bread crumbs.
6. Once the mix cools off, form the desired shape cutlets. Dip it in egg whites and bread crumbs.
7. Deep fry the prepared cutlets and you can freeze the remaining until its needed for use. Remember to keep it at least 1 hour before frying.
