Its a long time craving for spicy vegetarian dish that made me thought of preparing the idea of Mushroom Fried Rice. This fried rice s rich in flavors, spicy and has the most satisfying delight of a homely recipe. Mushroom fried rice recipe is an Indo-Chinese rice recipe made with basmati rice, sauteed mushrooms and other Indian spices. Being an all-time favorite recipe for all age groups, it is usually served with Manchurian gravy or chilli gravy but can be had all by itself with a simple raita (a simple youghurt salad).
Ingredients
- garlic fine diced 4 cloves
- ginger fine diced - small piece
- green chilli diced 1
- 1 large onion diced
- 1 capsicum chopped
- 1 and 1/2 mushrooms chopped
- salt
- pepper - as per taste
- vinegar - 1 tbsp
- 1 tbsp soy sauce
- 1 1/2 tbsp schezwan sauce
- Spring Onions
- 1 tsp chilli powder (spicy)
- 1 tbsp garlic powder
- 1 tsp pepper
- 1 cup basmati rice
- Vegetable/Corn Oil
Method
1. Cook basmati rice a day before, so that the rice doesn't get sticky while preparing fried rice.
2. Saute the mushroom in oil with chilli powder, salt, pepper and garlic powder.
3. In a large pan saute diced ginger, garlic, green chilli, onion chopped in oil. Once the mix becomes translucent, add the seasonings - pepper, vinegar, soy sauce, schezwan sauce and mushrooms. Add salt reasonably (be careful while adding salt at this stage as you have added salt while preparing rice and cooking mushrooms).
4. Add rice after mixing the seasoning. Blend well without breaking the rice.
5. Finally garnish with spring onions and serve with your choice veg stir fry and raita.
TIPS
- You can add additional veggies of your choice, however its best advised not to alter the taste by adding other veggies.
- You can add additional sauces based on your taste preference and also add scrambled eggs if you opt for.
- Try to use a wide pan to make this dish. By choosing a wide pan, the mushrooms will be spread out in a single layer and will brown fast.
- You can increase the amount of sauces used if that suits your taste.
