Ingredients
Egg scrambled
- green chilli 1/2
- 2 eggs
- chilli flakes
- small quantity turmeric powder (this is optional)
- salt
Chicken
- salt
- chilli powder 1/2 tsp
- pepper - 1/4 tsp
- chilli flakes 1/4 tsp
For roasting chicken
- chilli powder - 1 tsp
- pepper - 1/4 tsp
Basmati rice - 1 cup (prepare it the day before cooking fried rice)
- cloves
- cardamom
- salt
- Vegetable oil
- 2 medium sized onions diced
- green chilli - 1
- ginger garlic paste - 1 tbsp
- beans - 1/2 cup
- corn - 1/2 cup
- carrot diced 1/2 cup
- tomato ketchup - 1 tbsp
- chilli sauce 1 tbsp
- soy sauce 1/2 tsp
- vinegar 1/4 tsp
- scallions/ spring onion (to garnish)
Instructions
1. Whisk together green chilli, salt, chilli flakes, turmeric powder, eggs and salt and prepare scrambled egg in oil, don't burn it to brown colour.
2. Take 1 or 1 and 1/2 boneless chicken piece , clean and chop to medium pieces. Season it with salt, chilli powder, pepper, chilli flakes. Marinate it well and keep it aside for 30 minutes. Cook it in a pot with lid closed until the chicken cooks well and turns soft.
3. Take a day old basmati rice and use it for preparing chicken fried rice. Its best recommended to prepare the rice day before cooking the fried rice, so that the rice does not stick to each other and helps in even absorption of flavours. While preparing the rice, add some cardamom , cloves and salt to get an aromatic flavour.
4. Chop the cooked chicken in chopper. Do not fine paste the chopping process. Make sure to get fine pieces of chicken while chopping as it can give the best taste in fried rice.
5. In a large pan saute onions diced, green chilli and ginger garlic paste.
6. In another pan saute the chopped chicken in oil, add 1 tsp chilli powder, 1/4 tsp pepper. Adjust the salt and seasonings accordingly.
7. As you saute the onion, ginger garlic and green chilli add the veggie mix ( beans, carrot and corn), combine well to cook. Now add the scrambled egg and roasted chicken. After mixing well, add tomato ketchup, chilli sauce, vinegar and soy sauce. Add the cooked basmati rice and mix well. Finally garnish it with scallions.
