Kerala Vegetable Stew

Here is my easy peasy recipe for a Vegetable Stew inspired from Kerala cuisine. As you would expect in any Kerala curry, this dish is coconut rich – so it has a natural sweetness to it. The flavour combinations are subtle but at the same time, the stew tastes absolutely delicious.
Ingredients
Carrot-1
Potato-2
Beans-12-15
Big Onion-1
Curry leaves-1 string
Water-2 cups
Salt-to taste
Coriander leaves-few
Curd-2 tbsp
Cashew nuts-6
For the masala paste
Big onion-1/4 of 1
Ginger-small piece
Garlic-1 clove
Green chilli-1-2
Curry leaves-5-6 leaves
Cloves-1
Cinnamon-1 small
Cardamom-1
Fennel Seeds-1/4tsp
Grated Coconut-4tbsp
Turmeric powder-1/2tsp
Coriander powder-1/4tsp

Wash and peel vegetables..Cut into small pieces(potato,carrot,beans,tomato) ..(if u want u can include cauliflower ,green peas etc) In a cooker add all these vegetable along with 1/2 of a big onion (sliced ) and water … Cook until done..(one whistle is enough). Let it cool down and open the cooker and set aside Add all ingredients listed in masala paste into a blender and make a very fine paste .. Add this paste to the cooked vegetable along with salt and allow to boil .. Stir well until the boiling point .. Allow to thicken the gravy to a semi medium consistency .. Garnish with coriander leaves ..
