Chicken Varutharachathu/ Chicken in roasted coconut gravy

Kerala style spicy chicken curry cooked with roasted coconut gravy... this special recipe is a showstopper on any occassion. You can check out all my different varieties of chicken curries. This is a version that I opt for on special occasions and it has won the fans just like a movie hitting the crore club. The freshly roasted coconut and spices makes it fragrant and yummy.

Ingredients
For coconut mix
- 1/2 cup coconut
-small piece ginger
-3 cloves garlic
- 1/2 of medium onion diced
- 1/2 green chilli diced
-1 tbsp pepper
-1 tsp fennel powder
-1 tbsp chilli powder (spicy)
-2 tbsp coriander powder
For preparation
-1 kg chicken (cut to medium size)
-2 big onions diced
-2 tbsp ginger garlic paste
-1/4 tsp garam masala
- 1 tbsp chilli powder (take an equal proportion of kashmiri and spicy powder)
-1 tbsp coriander powder
-1 medium size tomato cubed.
-1/2 cup curd

Method
1. Saute the grated coconut, ginger, garlic, green chilli, onion, pepper, fennel, chilli powder, coriander powder.
2. Once its roasted , cool off and grind it to fine paste using water.
3. Cut and clean the chicken pieces to medium size and marinate in turmeric and salt for half an hour.
4. In another pan, saute 2 big onions, ginger garlic paste, add garam masala, chilli powder, coriander powder. Saute until you get rid of the raw flavour.
5. To the sauted mix add the chicken pieces, tomato and curd and blend well. Add some hot boiling water to get enough gravy. Close the lid and cook for about 15 - 20 minutes.
6. Finally garnish with coriander leaves or curry leaves. Serve it hot with rice/ fried rice/ chapati/ pathiri.
