Chicken Pasta Alfredo Sauce

As easy to make as it is delicious, this seemingly indulgent but surprisingly healthy one-pot creamy chicken pasta will no doubt become a family favorite.It's been a while since I've made a one-pot pasta! But this weekend I got a craving for a creamy, smoky, spicy, easy one pot dish, so I set to work! This Creamy Chicken Pasta is incredibly easy to make, so it's perfect for weeknight dinners. Fettuccine Alfredo, although originates from Italy, it is a widely accepted and all time favourite to almost everyone around the world for the delicacy it maintains. Here I have prepared a revamped version of Chicken Alfredo Pasta. Hope you enjoy the recipe!

Ingredients

2 cups penne pasta 200 grams, or use 1 cup (100 grams) pasta for more saucy pasta

2 tablespoons butter

2 tbsp garlic powder

1/2 tsp pepper

1 tbsp chilli powder

1/4 tsp cumin

2 tbsp coriander powder

1 tablespoons oil

1.5 tablespoon all purpose flour, also known as maida

1.5 cups milk, warm

1 tbsp corn flour

1 teaspoon dried oregano

1/2 teaspoon red chili flakes

optional salt

to taste black pepper

to taste parmesan cheese, optional, to serve onion cubed

capsicum

mushroom

chicken

vegetable oil

basil

rosemary

thyme

Method

1. In a pan, add 2 cup of pasta. In addition add oil and required salt.

2. Cook boneless chicken with salt, pepper and chilli flakes. Shred the cooked chicken using fork.

3. In a pan, mildly roast the chicken along with cubed onion, capsicum and mushroom. After mildly roasting, add seasonings and adjust salt level.

4. In a pan, add a small cube of butter, add 1 and 1/2 cup heavy cream milk. Add some garlic powder, 2 tbsp of flour, 1 tbsp corn flour and pepper. 

5. Stir well and add chopped herbs. After cooking for a while, add the cooked pasta, roasted chicken and veggies.
