Chicken and Mixed Vegetable Soup

Chicken and mixed vegetable soup! Loaded with chicken, potatoes, carrots, cabbage, bell peppers , brussel sprouts, onions, corn is hearty, satisfying and so delicious. If you're looking for a dinner option your whole family can agree on, look no further. This soup is it ! 



Ingredients

Boneless chicken -3 large pieces ( cook the chicken with 1tbsp chilli flakes, 1/4tbsp pepper and salt)

Butter 1 medium cube

Green chilli 1

diced ginger garlic 1tbsp (1/2 inch ginger and 4 garlic cloves)

Oregano

Chilli flakes

Pepper

Salt

Sauce mix - 1/2 tsp sugar, 3 tbsp tomato sauce, 2 tbsp soya sauce, 1/2 tsp vinegar)

Corn flour 3 tbsp

Veggies - 4

5 leafy part of cabbage, brussel sprouts, capsicum, carrots, corn, onion (you can choose the vegetables you prefer)

Vegetable oil


Directions

1. Boil the chicken with salt, pepper and chili flakes. Save the chicken stock that you got while cooking the chicken. Shred the cooked chicken in an even manner.Saute the shredded chicken in butter until mild roasted form.

2. In a hollow pan, saute ginger garlic and green chilli in oil.You can microwave the veggies for 2 minutes or add subsequently after sauteing green chilli mix. 

3. Now add the roasted chicken, chicken broth and hot boiling water (as needed).Once the mix blends and cooks for a while, add the sauce mix and corn flour slurry.You can add oregano or any choice of herbs to make it flavorful. 

4. Cook with lid closed. The entire boiling process in pan took about 25 minutes. Transfer it to a serving bowl with serve it hot with toasted bread of your choice.
