Uzhunnu Vada,a popular South Indian snack is very perfect for this cold and dull weather. Its been long since I’ve prepared this snack and was craving for this. Uzhunnu vada or medu vada is a very common snack in south India and is a perfect accompaniment with a cup of hot piping tea.

Ingredients

Urad Dal-2 cups

Salt

Onion - medium diced

Green chilli - 5-7

Curry leaves -2 strings

Ginger-1 medium piece

Sambhar powder - 1 tsp

Rice Flour - 1/4 cup

Asafoetida powder-1/4 tsp

Water-10 1/2 tbsp

Oil

Method

Soak urad dal for 3 hours. Wash well and drain. Grind to a coarse paste by adding less amount of water in many batches. Mix well diced ginger and onion, green chilli, sambhar powder, asafoetida and curry leaves along with the ground dal. Finally add rice flour and salt. Beat this paste well for 5 minutes. Make vada doughs. Heat oil and when medium hot slide the vada into the oil and fry in medium flame till golden shade.
