Tomato dosa is a bright colored crispy and delicious Indian crepe made by grinding soaked rice, tomatoes and few basic spices to a batter and then made into dosa. Tomato dosa is super easy to prepare unlike regular dosa as the batter needs no fermentation. Here I have prepared tomato dosa with saravana bhavan style green coconut chutney. It has a beautiful Orange color which makes it so attractive and yes it is delicious too. It is a spicy tangy and delicious dosa. It is rich in protein due to the addition of the dals.
Method
Blend together 2 tomatoes, small piece of ginger, 1 green chilli, 2 dry red chillies and some curry leaves (without water).
Add 1/2 glass of semolina and let it rest for 5 mintes. Later add 1/2 glass of rice flour. Keep aside a tablespoon of rice flour. Blend the mixture to a flowing consistency. Add the remaining rice flour. (This is to make dosa slightly crispy).
You do not have to ferment this. Add salt and make dosas using a non stick pan.
For the chutney, roast 1 and 1/2 tbsp chana dal mildly. After cooling off blend it with 7 tbsp grated coconut, 1 green chilli, and chana dal roasted in the small jar of blender. Gradually add water and blend to a right consistency.
Splutter mustard seeds and curry leaves in minimal oil and mix it together with coconut mix and adjust salt level. Serve it along with tomato dosa.
