For years, consumers of beloved KFC chicken have debated over what exactly the 11 secret herbs and spices are. For many, it is more than just recreating a recipe; it’s recreating your best childhood memories.
For others, it is simply a matter of recreating KFC like they were back in the good old days – when their chicken pieces were still huge, crispy and affordable.
Here I am preparing a KFC model Fried Chicken with minor variations.
INGREDIENTS
Drumsticks, chicken thighs -6 (preferably choose chicken with bone and skin)
Vinegar (to clean the chicken)
Salt
Dried basil, thyme and oregano
1 tsp pepper
1 tbsp chilli powder
1 tbsp garlic powder
Buttermilk
All purpose flour
Oats /Corn flakes beaten and crushed
Oil
Kashmiri chilli (for colour) 1 tsp
Rice flour 1 tbsp
Cut the chicken into medium pieces. Wash throughly using salt and vinegar.
In a bowl mix buttermilk, chili powder and salt. Soak the chicken pieces for 2 hours or overnight. Squeeze out the buttermilk from each piece and keep aside.
In a bowl add the required all purpose flour, salt, kashmiri chili, chili powder, garlic powder, Italian seasonings (oregano, thyme, basil), rice flour, and pepper.
In another bowl keep mildly crushed oats /corn flakes with garlic powder and salt (check the salt seasoning on chicken and add reasonably).
Take one chicken piece at a time. Dip it in flour mix (press firmly and coat it) and , then immerse coated chicken in ice cold water and immediately coat in the corn flakes or oats mix. This double coating helps to get thick layer. Repeat the coating process for rest of the chicken pieces.
You can now deep fry the chicken or just drizzle some oil on coated chicken and fry it using air fryer.
Serve it hot with tomato ketchup, French fries and coleslaw.
