Honey Lemon Chicken

Quick and easy meals are the best family meals, which are perfect for a busy weeknight. This Egg fried rice is a simple stir fried dish mainly using egg, scallions, shredded cabbage and rice. While the Indo-Chinese egg fried rice is very popular in restaurants, this version of egg fried rice is simpler, excluding soya sauce. Crispy Honey Lemon Chicken is the best combo that can match this fried rice. It is a restaurant-worthy meal, that can be made at home ! Crispy, sticky and full of honey, lemon and spice balanced flavor.



INGREDIENTS

- Chicken 1/2 kg

- Chilli powder 1tsp

- Kashmiri chilli powder - 1/2 tsp

- Turmeric powder - 1/4 tsp

- Pepper powder - 1tsp

- Honey - 1&1/2 tsp

- Lemon zest

- Lemon juice - 1/2 of a large lemon

- Soya sauce - 1 tsp

- Salt

- Sriracha/Chilli Sauce 1 tsp

- All purpose flour 2 tsp

- Onion - 1 medium cut to wedges

- Capsicum - 1 medium cut to wedges

- Garlic - 5 cloves diced

- Vinegar - 1 tsp

- Chilli Flakes - 1tsp

- Scallions


- I took bone and boneless chicken to prepare, cut it and chop to medium pieces.

- Marinate the chicken with spices - chilli powder (spicy), kasmiri chilli powder, turmeric powder a pinch, salt, pepper, honey, lemon zest, lemon juice, soya sauce and chilli sauce. Marinate for about 1/2 an hour. ( kashmiri chilli powder is just added for colour.)

- After marinating for 1/2 an hour, cook it in a pot pan with oil drizzled. (Just sufficient enough to not to stick to bottom).

- Close the lid and cook for 10 - 12 minutes. You will see the chicken soft and with gravy.

- After 10 minutes add, flour slurry (maida /all purpose flour mixed with water, without forming lumps) to the gravy.

- When the cooking is done 3/4th, turn of the stove. In another large pan, saute onion and capsicum cut into wedges (like for chilli chicken), add some crushed garlic, chilli sauce , vinegar and chili flakes in oil. Add the cooked chicken with gravy. Cook on simmer for about 2 - 3 minutes.

- Finally garnish with scallions/spring onion and serve it hot.


Notes

- Use honey reasonably, you will never taste the honey flavor separately, but at the same time it blends well with other spices.

- I used about 1/2 chicken breast and 5 chicken thighs and spices coat well and tastes better with mixed pieces.

- Use salt sparingly as soya sauce has salt content.
