Carrot Cake

Carrot cake is the perfect celebration cake for any occassion. This super moist fragrant carrot cake is both foolproof and delicious. Lets find out the recipe here.

Carrot Cake

Ingredients

- Eggs - 2

- Butter (unsalted) - 7 tbsp

- Sugar - 1 cup ( you can add more sugar if required as per your individual taste)

- All purpose flour - 1.25 cup

- Baking powder - 1 tsp

- Baking soda - 1 tsp

- Almond extract - 1 tsp 

- Vanilla essence - 1 tsp

- a pinch of salt

- Milk - 7 - 8 tbsp

- Water - as needed for merging the cake batter.

- Carrot - finely grated - 1/4 cup

Instructions

1. In a bowl add 2 eggs and beat it till it becomes nice and  fluffy. In addition add 7 tablespoon butter along with 1/4 cup vegetable or corn oil and beat it fine to blend together.


2. Now, add sugar along with the egg mix, then combine all purpose flour, baking soda and baking powder. Sieve the dry ingredients well before adding to the batter. At this stage you can include, almond extract, vanilla essence and a pinch of salt.

3. Pour 7 - 8 tbsp milk and water as needed to form a fluffy consistent cake batter. Add the water from time to time. 

4. Now, add the finely grated carrot and merge well to cake batter.

5. Once the cake batter is ready, grease the pan you are about to bake and gently pour the batter from the center. Tap the mold bake tin slightly to get rid of air bubbles and also to get a well leveled cake. Always fill half the tin with batter and allow room for self raising.

6. Preheat the oven for 10 minutes, then bake the cake at 20 minutes at 350 degrees and 20 minutes at 200 degrees.

 

Best tips for PERFECT CAKE

- Do not make assumptions and change the measurements of any ingredients while planning to bake the cake.

- All the ingredients must be taken in the same temperature or at least the ingredients should not vary some in cold and others in room temperature.

 - Carrot, by itself is sweet when you grind and add to the cake batter,  hence check the sugar level and increase the quantity if required.

- Make sure to keep the cake tin for baking in the center of the oven.

- After baking the cake for first 20 minutes, adjust the time and reduce the temperature when you bake again . If you continuously bake at the same temperature, it may result in a burnt lower surface thereby affecting the taste of the cake. Check the baking process of the cake using a clean knife or a skewer after about 35 minutes.
